Amazingly, they are all available here in Kyushu Island. Kyushu is wonderfully blessed with enriched ingredients, food and cuisine. Although very famous as a Spicy-Mentaiko company, Yamaya also carries out various business operations. We also process, produce and sell Dashi(soup-stock), Karashi-Takana(Japanese leaf-mustard), and other general foods. We also retail such food-products at train stations and tourist attractions.
We also operate our business in a wide range of fields, including the nationwide development of a variety of restaurants, such as motsunabe-restaurants (serving "Hot-Pot Offal") and cafes, and the production of agricultural produce.
Yamaya has been committed to the promotion of food & cuisine of the whole Kyushu by keeping a good connection with our customers, food-producers, suppliers & buyers and people in local communities in our business-operations.

Now, we, Yamaya, produce and sell various kinds of foods, not just Spicy Mentaiko (Spicy Fish Eggs); However, Spicy Mentaiko is Yamaya's Flagship. Since our establishment in 1974, we've adopted the unique way of maturing the taste of Spicy Mentaiko slowly over "168 hours" in our special sauce called "Takumi-no-Sauce". Thus, we offer Spicy Mentaiko of Highest Quality to our market. At the same time, we offer a wide variety of Spicy-Mentaiko-based foods, which can be enjoyed casually, for customers.
We're determined to further promote Spicy Mentaiko as a specialty of Fukuoka/Kyushu and as a part of Japan's Cuisine Culture.
